Rio Briati Parmesan is hand selected and aged for a hard, granular texture studded with small, crunchy crystals (those little clusters are actually protein, not salt and they develop in well-aged cheeses starting at 9 months of age). Rio Briati Parmesan’s flavor is both sweet and salty, with lingering notes of toasted nuts. It’s delicious enough to eat by itself, or smeared with sweet fig jam, but typically Parmesan is grated over a wide variety of dishes. Don’t just stop at pasta! Parmesan can be grated or shaved over salad or roasted or steamed vegetables.
