Swiss Gruyere Cheese
This extra-special delicacy from the Gruyere district of Switzerland is well-known as the basic ingredient in fondue. But with its delightfully nutty, spicy, full flavor, it is delicious as a table cheese as well. Upon eating Gruyere, one immediately recognizes the taste of whole milk that is used exclusively in making this grand cheese. We say it is grand because a whole wheel of Gruyere weighs about 80 pounds. In fact, it takes over 100 gallons of milk to make a single wheel of Gruyere! Enjoy this traditional favorite julienned into a chef’s salad, melted on a hot open-faced sandwich, or, of course, in a classic cheese fondue.

Mature English Cheddar Cheese
This delicious mature cheddar has a bold and distinctive taste. Made in the heartland of England’s cheddar region, the milk is exclusively from cows that are free to roam and graze on the land. This bold cheddar is aged for a minimum of 2 years and takes on a distinctively nutty flavor. The creamy texture is perfect for slicing and pairing with an ale and your favorite charcuterie. This classic cheddar is one worth tasting and adds incredible flavor melted in mac and cheese or grated as a savory finish to an apple tart or pie.

Italian Mountain Gorgonzola Cheese
From Italy’s Lombardy region, we present Mountain Gorgonzola, a sharp and tangy cheese. Like many cheeses, this cheese takes its name from the local town where it was created, Gorgonzola, just south of Milan. There, a simple fresh cheese was made for generations, until a few forgotten wheels were found to have turned blue with mold. This edible mold was a natural part of the terroir, coming from the local caves of Valsassina. Upon tasting the moldy cheese, the local dairymen found it to be delicious, and allowed their wheels to go moldy on purpose. Thus Stracchino di Gorgonzola, Italy’s most famous blue cheese, was born.
Today the cheese is more well-known than the town, and not without reason. Made of cow’s milk, this thick, sliceable blue has a fudgey texture and gentle blue bite. Not as sharp as Roquefort or as pungent as Stilton, Mountain Gorgonzola is a consistently delightful cheese that will convert even non-blue cheese eaters into fans. As it ages, the 14 lb drums of cheese are gently washed with a saltwater brine, allowing the cheese to stay moist and smooth. This also gives Mountain Gorgonzola its thin, pinkish-red rind. With its white interior laced with streaks of blue, Mountain Gorgonzola is an attractive table cheese and a savory ingredient in your favorite salad. Gorgonzola takes very well to fruits, especially figs and pears. Or try it the Italian way-– alone on a plate drizzled with honey.

Beemster Classic Extra Aged Gouda Cheese
We experienced a moment of culinary divinity when we first sampled this Extra Aged Gouda from Beemster. Previously, we doubted that any cheese could be more flavorful than Beemster’s 18-month Aged Gouda, but their X.O. indeed sets a new bar. With this 26-month gouda, we first noticed its delicate, brittle texture. After we tasted it, the flavor of butterscotch permeated the palate, followed by alternating waves of whiskey and pecan.
