The world’s most famous melting cheese, Raclette Cheese is made in the Alps on both sides of the French-Swiss border.
The French version is perhaps a bit softer than Swiss Raclette, but the two taste very similar.
Raclette has a semi-soft interior dotted with small holes, and a rosy, inedible rind. Eaten as a table cheese, Raclette has a smooth, creamy taste that is neither too salty nor sharp. However, our French Raclette tends to have a strong, pungent aroma that is not for the timid.

Preheat oven to 350F. Boil potatoes until tender, drain.Thinly slice Raclette and place even amounts into three ovenproof ramekins.Place the sausages in a baking dish. Melted cheese dishes were the signature food of mountain herdsman while they lived on the alp and took care of the cows, milking and making cheese. The first raclette most likely happened when someone left a wheel of cheese too close to the fire and the surface of the cheese started to melt, From that point, all you have to do is scrape the cheese onto a plate and there you go! 1/2 Pound Raclette (or Le Chartreux) 12 New potatoes 3 Cooked 1/4 pound sausages of your favorite variety 1 Fennel bulb, trimmed and sliced Cornichons Crusty French bread

Boil potatoes until tender, drain, cut into halves and set aside.Preheat oven to 450F. Trim rind off cheese and cut into 4 even pieces.Place one piece onto each of four ovenproof plates.Heat the cheese for a few minutes until thoroughly melted. Mix cheese with potatoes, onions and cornichons. Serve with crusty French bread. Serves 4.

The Story of Raclette
Traditionally the melting (and probably the eating) of a Raclette took place in front of an open fire with the cut side of the huge piece of cheese facing the fire. As it started to melt, the soft part of the cheese was scraped off with a large knife and served to those gathered round the fireplace or table. The tradition soon spread across the Savoy region and then onto other countries beyond the Alps and today Raclette has become an international star!
