Ours is also made from an ancient breed of sheep, Manchega, that have been used to make Manchego since the Bronze Age (3200-600 BC). Manchego is unpasteurized and aged in natural caved for two months before it reaches us. It’s strict production process and natural aging give our Manchego is nutty, sweet flavor.Ê Pair this with membrillo for a very traditional pairing, serve with fruit after dinner, or enjoy it on its own!
