Cantalet AOC (a smaller version of Cantal) is a semi-hard, aged, cow’s milk cheese from the Cantal department of thr Auvergne region in France. One of the oldest French cheeses, it dates back to 2,000 years ago. This Cantal is aged for 3 months and has a taste that is strong, tangy, and buttery—comparable to that of Cheddar. Auvergne is a region known to be blessed by mountain storms and summer sun, and the pasture lands are extremely fertile. It is to no surprise then that Cantalet cheese captures the aromas and richness of these pasture lands. Cantalet pairs well on a cheese plate with nuts, grapes, and apples. Or, it can be used in soups, salads, fondue, or gratins. For wine, try pairing with a Merlot or Cabernet Sauvignon. Texture: The form of the cheese is massive and dumpy, with a soft yellow interior.
