Beemster XO Gouda is a super bold and assertive cow’s milk cheese from the Beemster Poddle area of The Netherlands (Holland), a region that was declared a Unesco World Heritage Site, where the pastures are pesticide free and contain a rare blue sea clay. Aged for at least 26 months, Beemster XO develops big dense flavors and intense aromas. The color itself is a bright orange, making this cheese very pretty on a cheese board. The flavor is delicious, with sweet notes of caramel and butterscotch paired with dark malty whiskey flavors. Though hard and perfect for grating, Beemster XO is quite buttery on the tongue, with crunchy protein crystals throughout. Use this cheese for snacking, much like an aged cheddar, paired with cured meats. Serve with sweet dessert wines like Port, Sherry or Madeira.
